I have an unbelievable sweet tooth. And I’m trying to cut back on sugar. Do you see the problem here?
To survive I’ve been trying to come up with healthier versions of all my favorite recipes. Like I did in my Heavenly Healthy Cheesecake recipe.
I still had to tackle one of my favorite treats: oat bars for breakfast. Ooey gooey on the inside and crunchy on the outside. Mmmmmmmmmm.
After a bit of trial and error I came up with a recipe that will become my new go to breakfast!
These oat bars contain no processed sugar. To sweeten the bars I used dates. They are a great source of fibre, which helps digestion. I also used a few tablespoons of maple syrup. Maple syrup beats table sugar because it contains antioxidants and minerals, like zinc. Next time I want to try a version completely sweetened with fruit. I might swap the maple syrup for 2 mashed bananas.
The seeds add a bit more crunch and another sweet touch as well.
These berry bars make a perfect snack or breakfast treat. Top with Greek yoghurt or a scoop of “nice cream” (blend a frozen banana until smooth).
